Apple Rings

Happy New Year! It's that time again where everyone is looking for a new beginning, especially in the area of health and fitness. And if you're anything like me, snacking is the hardest part of eating healthy. It's hard to keep to that New Year's resolution when the craving for salty, crunchy chips sneaks in. I also looooooove chocolate and want it basically everyday in some form or another. This snack will help satisfy all those cravings and it ain't half bad for you either! 





Apple and peanut butter are a classic combination, but I swap it out with all natural almond butter. Be sure not to get a kind with added sugar and if you can make your own, even better! We want to stay as natural as possible here. Mini chocolate chips take care of that pesky chocolate craving. Dark would be the best option, but semi sweet is all I have been able to find. The pistachios add an extra crunch and provide saltiness. Other fun topping options are cashews, dried cranberries, shredded coconut, or chia seeds. 





INGREDIENTS 

honey crisp apple (or any apple of your choosing) 
almond butter 
mini chocolate chips
chopped pistachios  

INSTRUCTIONS 

1) Core apple and cut into rings or thin slices. 

2) Spread on desired amount of almond butter.

3) Top with mini chocolate chips and chopped pistachios.

4) Enjoy!
