Last December my husband & I went to Nashville for a few days to celebrate our wedding anniversary. We had a blast & ate tons of delicious food(You can read more about our trip here: Part 1 and Part 2). One place that sticks out in my memory is the Loveless Cafe & their biscuits. I ordered the biscuit platter, which is basically just a sampler of a few different types of biscuits. One of them that I picked was the pimento cheese & fried green tomatoes and I have been thinking about recreating it ever since.
This is not an exact recipe. I'm sharing links to my favorite ways to make each individual ingredient. The pimento cheese is my go to recipe from my mother-in-law. If you're going to go the homemade route on the biscuits I'm linking the very best recipe I know for delicious, all from scratch biscuits. I've made them several times & they are definitely worth the work. Store bought dough will also work just fine. And lastly, I have the link for the recipe I used for the fried green tomatoes. Chef John's recipes are trusted and always produce good results. Follow the instructions for battering & frying the tomatoes, leaving out the remoulade sauce.

INSTRUCTIONS
1) Make the pimento cheese ahead of time. It can be made up to 3 days early. Keep covered in the refrigerator & stir well before using.
2) Cook bacon & set aside.
3) Bake the biscuits.
4) While the biscuits are baking, set up the process for frying the green tomatoes.
5) Bread & fry the tomatoes according to the recipe. Drain on a paper towel lined plate.
6) As soon as the tomatoes are done, assemble the biscuits: place bacon on bottom piece of biscuit, top with one or two fried green tomatoes, top it off with a giant dollop of pimento cheese & the top piece of biscuit.
